Crispy pata

I was craving for a crispy pata last week so I decided to make one at home.It was my first time to do it.I was happy with the result coz it was really yummy!!!!It was so crunchy outside but tender inside.It was like eating a lechon at the same time :)

It is so easy to do,just boiled the meat with some bay leaves,black pepper corn,and salt until it's so tender.Drain it and make sure that it's really dry before you freeze it.Let it freeze overnight or 3 hours will do.Then rub fish sauce all over the meat and after that I put the pata at the container with flour in it.Make sure that the pata is covered with flour.Then deep fry it until golden brown and you're done.
